A night on the beers in Krakow isn't over at midnight, so you'll need
enough stomach lining to keep going until dawn and beyond. That's why
the Golonka was invented, a giant hamhock marinated in beer and cooked
slowly on a spit. Each golonka is served with spicy horseradish, traditional
Polish pickles, mustard and plenty of bread. Most importantly, it all
happens in a lively cellar brewery, so organising a few drinks won't be
a problem. We throw in two five-litre "giraffes" of freshly
